Here is a quick video vignette of my delicious lunch from Whole Foods Market!  I’m currently obsessed with this Spicy Cold Pressed Lemonade Baja Mushroom Sandwich from Clover Food Lab.  I may have had this exact meal four times in the past two weeks, but it is a perfect combination.  Several thousand people on YouTube agree with me, and have been enjoying this sneak peek into how delicious a plant-based diet can be.  Press play below!

 

 

Spicy Cayenne Lemonade Pairs Perfectly with Baja Flavor

 

The weather here was gorgeous and has put the East coast in the mood for a ‘fish taco’ inspired sandwich.   The crispy crunch of the deep fried baja mushrooms which contrast with a flavorful world of shredded and minced vegetable slaws are a hot weather hit.  

 

If your summer situation calls for lemonade, you really have to try adding a spicy cayenne kick to it, it takes the experience to a new level! I’m still trying to figure out how to make this taste good at home, but in the mean time this (rather exorbitantly priced) cold-press bottle from BluePrint is a treat.

 

If you don’t eat at your local Whole Foods Market you are missing out.  Mat stores have really fun food stalls inside like the Clover Food Lab in New England.  I would describe Clover as gourmet vegetarian and vegan fast food with an international vibe and great aesthetic.  As a bonus, they also have locations in and around Boston.
